Al Roker’s Trick to Making Perfect Baked Potatoes

There’s nothing better on a chilly fall evening than a loaded baked potato, but making the perfect spud – soft and fluffy on the inside – can be hard to achieve.
Fortunately, the TODAY show’s Al Roker is a huge fan of baked potatoes and has the following recipe for a perfectly baked potato.
“It’s the perfect side dish that can be dressed up or down,” Al said of the humble baked potato. “It tastes just as great with only a bit of butter as it does fully loaded with all the fixings.”
According to TODAY Roker suggests following this recipe:
Ingredients: 4 medium Idaho potatoes 4 tablespoons butter Salt and freshly ground black pepper 1 cup shredded cheddar cheese (optional)
Directions: Preheat oven to 350 degrees. Scrub the potatoes and pierce the skin several times with a fork. Place the potatoes in the preheated oven and bake for 90 minutes, or until slightly soft and golden brown. Slice the potatoes down the center and serve with butter, salt and freshly ground black pepper. Sprinkle shredded cheddar cheese on top if desired.
