The Pioneer Woman’s Secret to Tastier Potato Salad

With July 4th right around the corner, it’s likely the humble potato salad will be gracing many a potluck table.
Although regular potato salad is perfectly fine, when it comes to delivering a recipe with a little more zing Ree Drummond, aka The Pioneer Woman, has a tasty twist on the American classic.

Speaking to the Today show, Ree revealed herself and husband Ladd have been hosting July Fourth potlucks for the past 19 years – and although the loves to serve the usual baked beans and grilled chicken, she really enjoys serving her amped up version of potato salad.
Ree told Today her potato salad is just as lusciously creamy as the traditional version, but she loves to kick it up a notch by adding pepperoni!
Ree’s potato salad recipe uses Yukon gold potatoes, but she gives it an Italian twist by adding bits of pepperoni, green olives, and mozzarella pearls. She also amps up the flavor by incorporating marinara sauce to the mayonnaise and finishing the dish with a generous sprinkling of Parmesan cheese and fresh basil.
“Potato salad can be pretty boring and run of the mill,” Ree shared with Today. “So I think it has to be very delicious.”
